Ingredients
- Crepes:
- 1 C flour
- 1/2 tsp salt
- 3 eggs
- 1 1/2 C milk
- 2 T melted butter
- Chicken Filling:
- 1/2 small onion, diced
- 1/2 C flour
- 1/2 C white wine
- 2 1/2 C cubed chicken
- 4 T butter
- Dash of nutmeg
- 1 1/2 C chicken broth
- 1 C light cream
- 4 oz sliced fresh mushrooms
- Salt and pepper to taste
Preparation
Step 1
Crepes:
Mix thoroughly all crepe ingredients and allow batter to rest for 2 hours before using.
Pour crepe mix in a small pan to make thin crepes. Separate crepes with wax paper to keep them from sticking together. Set aside to fill.
Chicken Filling:
Saute onion in butter. Remove onion and make roux with flour, salt and pepper.
Slowly add chicken broth, wine, cream and remaining ingredients.
Simmer and stir until thickened, approximately 10 minutes
Put about 2 T of filling into crepe, roll or fold.
Place into baking dish using all crepes and pour remaining sauce over them or use sauce for individual table use.
Bake covered in 350 degree oven for 10-15 minutes.
Take cover off last 5 minutes
