Whoopie Pies

OMG Go to Starbucks and they have the most fabulous 190 calorie velvety mini cake that is absolutely the best. Whoopie Pies from Starbucks are my all time addiction on Friday afternoon. I am hoping this recipe that I stole from a People's Magazine will be even better so that I can share one of my passions in life.
Ingredients
- 2-2/3 cups flour
- 2/3 cup Dutch-processed cocoa
- 1-1/2 teaspoon baking powder
- 1-1/2 teaspoon baking soda
- 6 tablespoon unslated butter softened
- 1-1/3 cups dark brown sugar, tightly packed
- 1/2 cup canola or vegetable oil
- 3 eggs (room temp)
- 4 oz. bittersweet chocolate, melted and cooled
- 1-1/2 cups buttermilk
Preparation
Step 1
Sift together flour, cocoa, baking powder, baking soda and salt.
In an electric mixer, cream together butter and brown sugar. Drizzle in oil. Add the eggs 1 at a time. Scrape bowl between additions. Mix in chocolate.
Add dry ingredients in 3 additions, alternating with buttermilk in 2 additions. Pour batter into a shallow container. Chill at least 1 hour.
Preheat oven to 350*. Drop 2 tablespoons of batter 2 inches apart onto lightly greased, parchment covered baking sheets. Let rest 10 minutes.
Bake for 12 minutes, rotating pans after 6 minutes. Cool cakes completely.
Scoop filling onto half the cakes. Top with remaining cakes. Store in refrigerating.
FILLING:
Beat together 1 lb unsalted butter at room temperature and 1 1/2 cups confectioner's sugar sifted. Add 1 tablespoon vanilla and 1 lb container marshmallow fluff and beat until thoroughly incorporated.
