Chicken with Fresh Tomato and Ginger Soup

This is a light, bright, easy-to-make soup with tender chicken shreds, fresh ripe tomatoes, and coriander floating in a refreshing gingery broth. For me, fresh coriander makes this soup come alive, but it's also quite tasty with green onions. Most people are surprised to find tomatoes in Chinese cooking. They're not native to China but the Cantonese, especially, enjoy them in such dishes as stir-fried beef and tomatoes, or diced in soups such as this one

Ingredients
- Marinade:
- 2 chicken breast halves (about 1 pound) skinned, boend, and sliced in shreds
- 2 Tbsp water
- 1 tsp soy sauce
- 1 tsp dry sherry
- 1/4 tsp sesame oil
- 1 tsp potato or cornstarch
- 4 cups chicken stock
- 2 Tbsp minced fresh ginger
- 2 medium tomatoes, cut into large dice
- 1 1/2 Tbsp dry sherry
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup chopped fresh coriander or 3 green onions, finely chopped
- 1/2 tsp sesame oil
Preparation
Step 1
1. Combine chicken and marinade in bowl; marinate while bringing stock to a boil.
2. Bring chicken stock to a boil in a medium saucepan. Reduce heat; add ginger and simmer for 5 minutes. Add chicken and tomatoes. Stir gently to separate chicken shreds; cook for 2 minutes or until chicken is cooked through.
3. Add dry sherry, salt, pepper, coriander or green onions, and sesame oil; stir. Serve immediately.
Serves 4.
Note: If you want to make this for more of a meal, add rice noodles (broken up) with chicken and tomatoes.
