Stir fry W/Garlic Sauce

Garlic Sauce:
½ cup low sodium chicken or veg broth
¼ cup dry sherry or chinese rice wine
3 tbs hoisin sauce
1 tbs low sodium soy sauce
1 tsp toasted sesame oil
2 tbs sugar (not in orig recipe)
2 tsp cornstarch (add more for thicker sauce & coating)
3 medium garlic cloves, minced (abt 1 tbs)
⅛ tsp red pepper flakes
Directions
Combine all except the cornstarch, garlic & pepper flakes & set aside.
Add garlic & pepper flakes to step 1 of stir fry recipe
Add cornstarch w/stir fry sauce
Use for for stir fry w/garlic sauce
IF USING SOFT TOFU:
Cut into desired sized cubes, let drain on paper towels while making sauce
Do not stir fry tofu; marinate in some sauce while cooking veg, add to pan at end of cooking & gently toss/stir w/veg & sauce
Make 25% more sauce & use some for marinade:
5/8 cup broth
5/16 cup wine
3 3/4 tbs hoisin
1 1/4 tbs soy
1 1/4 tsp sesame oil
2 1/2 tbs sugar
2 1/2 tsp cornstarch
1 1/4 tbs garlic
1/8 tsp + a little red pepper flakes
Ingredients
- for veg i used:
- 3/4 lb pork tenderloin, cut into thin strips, or other protein
- 2 tsp low sodium soy sauce
- 2 tsp dry sherry or chinese rice wine
- 3 medium cloves garlic, minced (abt 1 tbs)
- 1 tbs grated ginger
- 5 tsp peanut or veg oil
- 1 cup scallion whites, sliced on bias into 1" pieces (i used sliced onion)
- 2 med red bell peppers, cut into 1/4" strips
- 1 1/2 cups scallion greens, sliced on bias into 1/2" pieces
- 1 recipe garlic sauce (see p 283 or this index)
- onion, red pepper, carrots, snow peas, baby bok choy
- for bok choy-cut leafy tops off, stir fry stalks w/longer cooking veg, leafy parts shorter time
Preparation
Step 1
Toss protein w/ soy & sherry/wine
Stir fry protein til cooked, remove from pan & set aside
add 1 tsp oil to pa,, stir fry scallion whites (or onion) abt 1 min, add addtl oil & add longer cooking veg, stir fry til tender
add any quick cooking veg
Clear space in pan, add garlic & ginger & stir fry til fragrant, abt 45 secs
Stir garlic & ginger into vegetables
Add protein back in & toss to combine
whisk sauce to combine, add to pan & bring to simmer
add 1/8 tsp red pepper flakes
Toss til all well coated
serve over rice or noodles
