Step 1
4, 6-8 oz fresh or frozen boneless walleye fillets with skin.
4 individual or 2 medium maple, cherry, or cedar grilling planks. For at least one hour, with a weight, soak planks in water to cover them.
Rinse fish and pat dry.
Sprinkle fish with salt.
In a bowl combine:
3 tbsp lemon juice
3 tbsp olive oil
2 tbsp fresh dill or 1 tsp dried dill
4 tsp garlic pepper seasoning
1 tbsp brown sugar
2 tsp lemon pepper sesoning
1/2 tsp paprika
Brush only the flesh side with this mixture.
Put planks on grill about 5 minutes until the start smoking and crackling. Then put each fillet on plank, skin side down.
Put a small amount of mashed potatoes on plank and drizil with butter.
Grill, covered, for 18-22 minutes or until fish flakes with fork. NOTE: for a gas grill use medium heat.
