Grasshopper Cupcakes

This is a recipe for the minty whipped cream frosting. Make your favorite chocolate cake or a good quality box cake mix into cupcakes or even mini cupcakes and frost with this delicious frosting!
Ingredients
- 12 chocolate cupcakes
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 tsp. mint extract
- 3 drops green food coloring
- 2 Tbsp. chocolate syrup (garnish)
- 6 Andes chocolate mint candies

Preparation
Step 1
1.In a large mixing bowl, beat heavy cream with a whisk (attached to a stand mixer or a handheld electric mixer) for 2-3 minutes until thickened. Slowly beat in the powdered sugar, mint extract and green food coloring. Beat an additional 2-3 minutes until desired consistency.
2.Frost cupcakes, cake or brownie and drizzle with chocolate syrup. Top with mint candies.
Note:
**Note: Tip 32 was used to frost cupcakes in photo above. Recipe will frost 12 cupcakes, one 13x9 pan of brownies or a 2 layer 8 inch cake.
