Ingredients
- 8 hard-cooked eggs
- 1/4 cup Miracle Whip
- 1/4 cup homemade fresh salsa
- 1 tbsp crema, or sour cream if crema is not available
- a tiny amount of green or red food coloring
- 2 tbsp minced green onions
- Salt and freshly ground pepper
- To create "devil" garnish
- Green peppers, red peppers and chives
Preparation
Step 1
Slice the eggs in half lengthwise. Remove yolks and place them in a mixing bowl. Set the whites aside. Mash the yolks with a fork until crumbly. Add the Miracle Whip, salsa, crema, green onions, salt and pepper and food coloring. Stuff or pipe the filling into the egg whites.
To turn into devils, cut red and green peppers into small triangles to create horns and goatee; stick trimmed chives into sides for mustache.
Serve immediately or chill until ready to serve.
