Chicken Noodles and Asparagus

Ingredients

  • 3 Tbs oil
  • 1 small onion minced
  • 1/2 lb. fresh asparagus, cut in 1/2" slices
  • 1 carrot - thinly sliced
  • 1 lb boneless chicken breasts 1/2" diced
  • 1 Tbs butter
  • 1 C fine egg noodles
  • 1 C chicken broth
  • 1 C dry sherry
  • 1/2 C parsley
  • 1/2 Tsp salt
  • 1/4 Tsp pepper

Preparation

Step 1

In wok - heat half of oil on high heat. Add onion, asparagus and carrot - cook for 3 minutes and remove.

Add more oil and chicken - cook till white - 2 -3 minutes. Remove

Add butter and noodles, toss to coat - 1 minute.
Add chicken and vegetables to wok.

Add: broth, sherry, parsley, salt and pepper. Bring to boil. Reduce heat to medium and cover until noodles are tender and most of liquid is absorbed. 10 - 12 minutes.
