Ingredients
- 1/4 cup water
- 3 tbsp cider vinegar
- 2 tbsp honey
- 8 dried apricot halves, chopped
- 1 tsp finely grated peeled ginger root
- 1 tsp minced scallion
- 1 tsp finely chopped green pepper
Preparation
Step 1
Place all ingredients in a food processor or blender; puree.
Pour the mixture into a small saucepan; bring to a boil, then simmer about 10 minutes. Cover and store in refrigerator.
Serve at room temperature with Vegetable Egg Rolls (recipe your choice or commercially prepared).
