Ingredients
- 2 large potatoes
- 1 cup grated Cheddar cheese (4 ounces)
- 2 scallions, chopped
- 2 eggs
- 1 cup cottage cheese (8 ounces)
- 4 tbsp chopped fresh parsley
- Pepper, to taste
Preparation
Step 1
Cut potatoes into thirds and simmer just until tender, 15 to 20 minutes. Drain, cool partially, and cut into 1/4-inch-thick slices.
Preheat oven to 375 F. Oil a 9-by-9-inch baking dish.
In the dish, layer 1/2 of the potatoes, followed by 1/2 of the Cheddar, and 1/2 of the scallions. Repeat layers.
In a food processor or blender, process the eggs and cottage cheese until smooth. Stir in 2 tablespoons of the chopped parsley and pepper. Pour this sauce over the potatoes. Sprinkle remaining parsley over the top.
Bake until top is lightly browned, 20 to 30 minutes.
