Ingredients

  • 4 chicken breasts
  • Mix next 4 ingredients together
  • 4 eggs - plus 3 T parm cheese
  • flour
  • salt and pepper
  • 3 T water
  • 1/4 cup olive oil
  • 1/2 lemon cut in rounds
  • 1/2 cup wine (pino grigio)
  • 1 cup chicken broth
  • 1-2 TB lemon juice
  • 2 TB Butter
  • 1/4 cup parsley and tyme fried in oil. Add a little garlic and rosemary

Step 1

Flatten chicken breasts to 1/4 inch. season with flour mixture and dredge into the egg. Can do it again, but end with the egg. Remove chicken from pan after cooking 2 min on each side.

Fry herbs

Add more oil if needed. toss lemon slices in pan and cook 1-2 minutes. Add wine and broth and juice of lemon. Simmer for 5 minutees to reduce sauce. Roll butter in flour and add to sauce with garlic

Add chicken back and simmer 2 more minutes. Garnish with herbs.
