Mexican Style Hamburger

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 can kidney beans, drained
  • 1 can diced tomatoes, undrained
  • 1 8 oz. can tomato sauce
  • 1 1/4 tsp. chili powder
  • 1/2 tsp. cumin
  • 1 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup grated Monterey Jack cheese
  • 1 cup corn chips

Preparation

Step 1

Saute beef and onion until beef is browned. Add kidney beans, tomatoes, tomato sauce, and spices; mix well. Bring to boiling, reduce heat and simmer, uncovered, stirring occasionally until mixture thickens - about 20 to 30 minutes.

Transfer into casserole dish. Sprinkle cheese in 3 diagonal stripes on top of casserole.l Broil 6 inches from heat just until cheese is melted. Before serving, arrange corn chips between the cheese stripes.
