Ingredients
- 1 pkg Jiffy corn muffin mix
- 1 pkg chopped broccoli, cooked and drained
- 1 onion, chopped
- 3/4 c cheddar cheese, shredded
- 3/4 c cottage cheese
- 4 eggs
- dash of salt
- 1 stick butter
Preparation
Step 1
Melt butter in iron skillet in 400* oven. While butter is melting mix remaining ingredients. Leave enough butter in pan to coat well, add remaining to cornbread mix. Mix well. Return mixture to pan and bake until light brown.
