Ingredients

  • 4 (6-oz.) boneless skinless chicken breast halves
  • Black pepper, to taste
  • 1/2 teaspoon Creole seasoning (or to taste)
  • 1 (14.5-oz.) can low sodium diced tomatoes
  • 1 medium stalk celery, finely chopped
  • 1 medium green bell pepper, seeded, deribbed and finely chopped
  • 2 cloves garlic, pressed
  • 2/3 cup sliced mushrooms
  • 1 jalapeno pepper, seeded, deribbed and chopped (more or less, to taste)

Preparation

Step 1

Sprinkle chicken with pepper; place in a slow cooker; add remaining ingredients; blend well. Cover and cook on LOW for 8 to 10 hours or until chicken is cooked through.

SERVING SUGGESTION: Baked sweet potatoes (nuke in microwave to keep your kitchen cool); Add a big salad tossed with Easy Balsamic Vinaigrette.
GLUTEN FREE: Make sure Creole seasoning and tomatoes are gluten free.
