Ingredients
- 4 (6-oz.) boneless skinless chicken breast halves
- Black pepper, to taste
- 1/2 teaspoon Creole seasoning (or to taste)
- 1 (14.5-oz.) can low sodium diced tomatoes
- 1 medium stalk celery, finely chopped
- 1 medium green bell pepper, seeded, deribbed and finely chopped
- 2 cloves garlic, pressed
- 2/3 cup sliced mushrooms
- 1 jalapeno pepper, seeded, deribbed and chopped (more or less, to taste)
Preparation
Step 1
Sprinkle chicken with pepper; place in a slow cooker; add remaining ingredients; blend well. Cover and cook on LOW for 8 to 10 hours or until chicken is cooked through.
SERVING SUGGESTION: Baked sweet potatoes (nuke in microwave to keep your kitchen cool); Add a big salad tossed with Easy Balsamic Vinaigrette.
GLUTEN FREE: Make sure Creole seasoning and tomatoes are gluten free.
