Pumpkin Cupcakes with Frosting

Ingredients

  • For Frosting:
  • 1 Betty Crocker Goldnen Vanilla Super Moist Cake Mix
  • 2 tsp pumpkin pie spice
  • 1 cup canned 100% pure pumpkin
  • 1 cup water
  • 8 oz light cream cheese
  • 1/2 cup pureed pumpkin
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 5 tbsp packed brown sugar

Preparation

Step 1

Preheat oven to 350 degrees F.

Line a cupcake tin with cupcake wrappers.

Pour cake mix in a large mixing bowl. Add spice, pumpkin and water; mix until smooth. About 2 minutes.

Fill cupcake liners 2/3 full and bake 20 - 25 minutes or until inserted toothpick comes out clean.

Let cool completely on wire rack.

Mix icing ingredients. When cupcakes are cool, decorate!
