Green Bean Saute

Ingredients

  • 2 tsp. olive oil
  • 1 (1-lb) Vidalia onion
  • 1/4 tsp. salt
  • 2 lb trimmed fresh green beans
  • 1 thinly sliced small yellow bell pepper
  • 1 thinly sliced small orange bell pepper
  • 1/4 tsp. pepper

Preparation

Step 1

1. Heat olive oil in large nonstick skillet over medium-low heat. Add onion cut into thin strips and salt; cook, stirring occasionally until golden brown (15-20 minutes).

2. Meanwhile bring large saucepan of water to boil. Add trimmed green beans; boil until crisp-tender, 4 minutes. Drain in colander. Rinse under cold running water until cool; drain well.

3. Transfer beans to large bowl; stir in onion, yellow and orange bell peppers. cover and chill up to 1 day.

4. To serve, heat 2 tsp. olive oil in nonstick Dutch oven over medium heat. Add vegetables, 1/4 tsp. salt and 1/4 tsp. pepper; cook, tossing with tongs until heated through, 6 minutes.
