Cheese Grits


Ingredients:
4 cups whole milk
2 cups water
½ teas salt
1 ¼ cup stone ground grits
1 cups shredded cheddar
1 cup shredded parmesan
½ cup butter
¼ cup whipping cream
1 tsp hot sauce
1/8 tsp ground red pepper
1 teas Worcestershire (optional)
2 eggs, beaten

Directions:
1. Preheat oven to 350.
2. Bring milk, water and salt to a boil over med-high heat. Gradually whisk in grits. Bring to boil.
3. Reduce heat to medium low and simmer, stirring occasionally for 10 minutes or until thickened.
4. Add the grated cheese, butter, whipping cream, hot sauce, pepper, and Worcestershire sauce. Stir until cheese is completely melted. Remove from heat.
5. Temper the eggs (add a small amount of grits to eggs to bring the temperature up) and add them to the grits. Mix well.
6. Pour grits into a lightly greased 2-qt or 11x8” baking dish.
7. Bake uncovered for 50 minutes or until golden and set.


Notes: Quick-cooking grits may be substituted. Decrease liquid to 5 cups and cook for 40 minutes.

I use black pepper instead of ground red pepper when serving with barbecue shrimp.
