Mom's Scalloped Potatoes

Ingredients

  • Potatoes (I use white, but you can Yukon Gold if you so desire)
  • Butter (the real stuff)
  • 3 Cheeses (I like Sharp Cheddar, White Cheddar and Colby – the last time I used a soft Gouda as well … yummy)
  • Panko Bread Crumbs and Parmesan
  • Milk or Half and Half
  • Salt and Pepper

Step 1

Butter a casserole dish (should be a deep dish) and set aside

Preheat oven to 325 degrees

Grate one of the cheeses above - doesn’t matter which one

Thinly slice the remaining cheeses

Peel potatoes and using a box grater, food processor or mandolin, slice thinly

Take enough potatoes for half the casserole dish and mix with some of your grated cheese. Put that in the dish. Top with a good sprinkling of salt and pepper. Add a layer of the mix cheeses and dot with ½ - 1 stick of butter (your preference) … these are an indulgence … I use a stick per layer ☺

Repeat the process with the second layer.

When both layers are completed, top with a mixture of Panko Bread Crumbs and Parmesan.

Add ½ cup of milk or half and half across the top.

Put in the oven for 1-1/2 to 2 hours or when potatoes are tender when pierced with a fork.

Speed method --- put sliced potatoes in boiling water for 10 minutes – this gives them a head start.
