Apple Butter IV

Ingredients
- 5 pounds apples, cut into 1/2-inch chunks
- 1 cup cider vinegar
- 1 1/2 cups honey
- 2 tsp ground cinnamon
- 1 tsp ground cloves
- Rind of 1 lemon, grated
- Juice of 1 lemon
Preparation
Step 1
Place the apple cubes in a Dutch oven or stock pot. Stir in the vinegar, honey, cinnamon, cloves, lemon rind, and lemon juice.
Cook, covered, over medium heat until the apples are very tender, 20 to 30 minutes. Puree in a food processor or blender.
Return the mixture to the pot and cook over low heat, uncovered, for 1 hour. Stir frequently.
The Apple Butter is done when it is thick and smooth. Cool; then pour into jars and store in the refrigerator.
