Ingredients
- Marinade:
- 1 1/2 lbs. boneless chicken breasts
- 2 tblsp. canola oil
- 1 large onion, sliced
- 3 peppers, sliced
- 2 tblsp. lime juice
- 2 tblsp olive oil
- 1 clove garlic, minced
- salt
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- 1/2 jalapeno, seeded & minced
- 1/4 c. chopped cilantro
- 8 flour tortillas
- salsa
- avocado or guacamole
- lettuce

Preparation
Step 1
1. Chicken can be sliced or left whole.
2. Mix all the marinade ingredients together. Marinate at room temperature or refrigerate up to 8 hours.
3. Heat a large skillet. Add oil.
4. Add chicken (either whole or sliced) & cook on both sides until done.
5. Remove chicken. Keep warm.
6. Cook the onions & peppers.
7. Slice chicken. You can add the chicken to the onions & peppers or serve all ingredients separately.
