Ingredients

  • 1 1/2

    lbs. boneless chicken breasts

  • 2

    tblsp. canola oil

  • 1

    large onion, sliced

  • 3

    peppers, sliced

  • Marinade:

  • 2

    tblsp. lime juice

  • 2

    tblsp olive oil

  • 1

    clove garlic, minced

  • salt

  • 1/2

    tsp. cumin

  • 1/2

    tsp. chili powder

  • 1/2

    jalapeno, seeded & minced

  • 1/4

    c. chopped cilantro

  • 8

    flour tortillas

  • salsa

  • avocado or guacamole

  • lettuce

Directions

1. Chicken can be sliced or left whole. 2. Mix all the marinade ingredients together. Marinate at room temperature or refrigerate up to 8 hours. 3. Heat a large skillet. Add oil. 4. Add chicken (either whole or sliced) & cook on both sides until done. 5. Remove chicken. Keep warm. 6. Cook the onions & peppers. 7. Slice chicken. You can add the chicken to the onions & peppers or serve all ingredients separately.
