Many-Grain Maple Muffins

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup yellow cornmeal
  • 1/2 cup rye flour
  • 2 tsp baking powder
  • 1/2 cup rolled oats
  • 1 egg
  • 1 1/2 cups milk
  • 1/4 cup safflower oil
  • 1/4 cup maple syrup

Preparation

Step 1

Preheat oven to 400 F. Oil enough cups in muffin tins for 18 muffins or line the cups with paper baking cups.

In a large bowl, combine the whole wheat flour, cornmeal, rye flour, and baking powder; stir in the oats.

In a medium-size bowl, beat the egg until light; add the milk, oil, and syrup. Add this mixture to the dry ingredients and stir until well combined.

Spoon the batter into muffin tins. Bake for 25 minutes. Serve warm with Apple Butter IV (recipe in collection).
