Coleslaw - Carrot and Grape Slaw

Ingredients

  • 2 cups shredded carrots
  • 2 cups chredded cabbage (preferably red or purple)
  • 1 cup halved green grapes
  • 1/4 cup roughly chopped walnuts
  • 1 Tbsp. finely chopped red onion
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. olive oil
  • 1/4 tea. salt
  • freshly ground black pepper

Preparation

Step 1

Toss all ingredients together in a large bowl. Serve.

If making slaw in advance, reserve the walnuts and toss in just before serving.
