Ingredients
- 1 cup whole wheat flour
- 1 cup wheat germ
- 1/4 cup sesame seeds
- 1/3 cup nonfat dry milk
- 3 tsp baking soda
- 1 cup milk
- 2 eggs, beaten
- 2/3 cup honey
- 1/3 cup safflower oil
- 1 cup chopped dates
Preparation
Step 1
Preheat oven to 400 F. Oil enough cups in muffin tins for 18 muffins or line the cups with paper baking cups.
In a large bowl, mix flour, wheat germ, sesame seeds, nonfat milk, and baking soda.
In a separate medium-size bowl, combine milk, eggs, honey, and oil. Add to flour mixture, and blend well. Add chopped dates; stir until evenly distributed.
Spoon mixture into muffin cups.
Bake until lightly browned, 20 to 25 minutes.
