Orange-Pineapple Butter

Good with Apricot Muffins (recipe in collection).

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1/3 cup safflower oil
  • 1/4 cup honey
  • 1/2 cup crushed pineapple, drained
  • 1 tbsp grated orange rind

Preparation

Step 1

Beat butter until light and fluffy. Beating continuously, gradually add oil and blend thoroughly. Beat in honey, crushed pineapple and orange rind.

Store in a covered container in the refrigerator. This butter will keep for 1 week.
