Ingredients
- 2 tbsp. sesame seeds
- 1/4 cup soy sauce
- 1/4 cup sake
- 1 tbsp. lemon juice
- 1 tbsp. sesame oil
- 1 tbsp. sugar
- 2 scallions, minced
- 2 tbsp. garlic, minced
- 2 tbsp. ginger, minced
- 1 pound boneless tender beef steaks, such as ribeye or New York, cut into 2-3 inch squares.
- 1 tsp. cornstarch dissolved in 2 tsp. water
- thinly sliced green onions
Preparation
Step 1
Place sesame seeds in a small frying pan over medium heat; cook, shaking pan frequently, until browned, 3 to 4 minutes. Immediately remove from pan to cool. Reserve 1/2 tsp. whole seeds for garnish, crush remaining seeds in a spice grinder.
Place crushed sesame seeds in a bowl with remaining marinade ingredients. Add beef to marinade; turn to coat. Cover and refrigerate for 4 hours or up to overnight.
Place a cast-iron frying pan or griddle over medium-high heat until hot. Lift meat from marinade and drain; reserve marinade in a small pan. Place meat in frying pan and cook, turning once, until done to your liking, about 2 minutes per side for rare.
While meat is cooking, simmer marinade for 3 minutes. Add cornstarch solution and cook, stirring until sauce bubbles and thickens slightly.
To serve, pour sauce onto a serving plate. Cut meat into crosswise slices, then reassemble in its original shape on sauce. Garnish with sesame seeds and green onion.
