Ingredients
- 2 bone in ham steaks
- 1/2 cup tequila
- 1 Tbsp. lime juice
- 1 cup orange juice
- 3 Tbsp. brown sugar, divided
- 2 tsp. ground cumin
- 1 or 2 jalapenos, sliced
Preparation
Step 1
Combine the tequila, lime juice, orange juice, 2 tablespoons of the brown sugar, cumin and jalapeno.
Marinate the ham steaks in the tequila mixture for 4 to 6 hours, or overnight.
Remove the ham steaks, reserving the marinade, and let them sit for 20 minutes. Put the marinade in a saucepan, keeping 1/4 cup for basting.
Nick the edges of the ham steak every 2-3 inches to prevent the steaks from curling.
Grill over medium heat 6 minutes per side. Brush with the marinade.
Boil the marinade in the saucepan for 1 minute. Add 1 tablespoon brown sugar and lower the heat to medium and cook until it reduces to 1/3 cup.
Serve with sauce on the side.
