Carob-Honey Round

Ingredients

  • 1/2 cup soft butter
  • 1 1/4 cups honey
  • 2 eggs
  • 1/2 cup carob powder
  • 2 1/4 cups whole wheat flour
  • 1/4 cup soy flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2/3 cup yogurt
  • 1 1/2 tsp vanilla
  • 1 cup chopped nuts or seeds

Preparation

Step 1

Cream butter and honey; add eggs and beat until fluffy. Combine carob powder, flours, baking powder and salt. Add to creamed mixture alternately with yogurt, beating after each addition. Add vanilla and nuts. Pour into two oiled 8-inch cake pans. Bake at 350 F for 30 to 35 minutes. Cool cakes in pans on racks for 5 minutes, then turn out and cool completely. Frost.
