Ingredients

  • 2 t canola oil
  • 2 onions chopped
  • 2 green peppers chopped
  • 4 garlic cloves minced
  • 6 c reduced sodium chx broth
  • 2 14 1/2 oz cans diced tomatoes with green chilis
  • 20 oz frozen corn, thawed
  • 2 t chili seasoning
  • 3 c cooked chicken breast chopped
  • 1/2 c coarsly chopped parsley or cilantro

Preparation

Step 1

Heat oil in large pan, add onions, peppers and garlic, cook stirring frequently till softened and lightly browned, about 5 min.
Add broth, tomatoes, corn, chili seasoning, bring to a boil over high heat, add chicken and cilantro or parsly, reduce heat and simmer till heated through about 2 min.
Serve with baked tortilla:-)
Spray 98% fat free flour tortilla with Pam and season with southwest seasoning.
Bake In tortilla baker sprayed with Pam.
325 for 10-12 min. DO. OT PREHEAT OVEN
