Ingredients
- 2 lbs fresh apples, cored and chopped
- 2 cups unsweetened pineapple juice
- 1 peeled orange, finely chopped
- 2 tbsp grated orange rind
- 1 lb raisins
- 1 lb currants
- 1 lb chopped, pitted dates
- 1/2 lb chopped raw almonds or pecans
- 1/4 cup apple juice
- 2 tsp cinnamon
- 1/2 tsp cardamom
- 1 tsp nutmeg
- 1/2 tsp allspice
- 2 tsp vanilla
Preparation
Step 1
Mix apples into pineapple juice; add orange rind. Stir in dried fruit and nuts. Mix apple juice and spices in small saucepan; simmer over low heat for 1 minute. Combine juice and fruit mixtures; add vanilla. Allow flavors to develop for 2 to 3 days in refrigerator. Freeze. Remove from freezer and allow to thaw in refrigerator 24 hours before using.
