Mincemeat - Uncooked

Ingredients

  • 2 lbs fresh apples, cored and chopped
  • 2 cups unsweetened pineapple juice
  • 1 peeled orange, finely chopped
  • 2 tbsp grated orange rind
  • 1 lb raisins
  • 1 lb currants
  • 1 lb chopped, pitted dates
  • 1/2 lb chopped raw almonds or pecans
  • 1/4 cup apple juice
  • 2 tsp cinnamon
  • 1/2 tsp cardamom
  • 1 tsp nutmeg
  • 1/2 tsp allspice
  • 2 tsp vanilla

Preparation

Step 1

Mix apples into pineapple juice; add orange rind. Stir in dried fruit and nuts. Mix apple juice and spices in small saucepan; simmer over low heat for 1 minute. Combine juice and fruit mixtures; add vanilla. Allow flavors to develop for 2 to 3 days in refrigerator. Freeze. Remove from freezer and allow to thaw in refrigerator 24 hours before using.
