Peanut Cheesecake

Ingredients

  • Crust:
  • 1/2 cup ground peanuts
  • 3/4 cup wheat germ
  • 1 tbsp honey
  • 1/4 cup melted butter
  • Filling:
  • 2 cups (16 ounces) cream cheese
  • 1 cup yogurt
  • 3 tbsp whole wheat flour
  • 1 cup honey
  • 4 eggs, separated
  • 1/2 cup peanut butter
  • 1 tsp orange juice
  • 1 tsp salt

Preparation

Step 1

Crust: Combine peanuts, wheat germ, honey and butter; press into the bottom of a 9-inch springform pan.

Filling: Cream together cream cheese, yogurt, flour and honey until light and fluffy. Add egg yolks, one at a time; then add peanut butter, orange juice and salt. Fold into stiffly beaten egg whites. Pour into above crust. Bake at 325 F for 1 hour and 15 to 30 minutes or until lightly browned and firm.
