Ingredients
- 16 oz ricotta
- 1 egg
- 1 tbsp extra virgin olive oil
- 1/4 cup parmesan or romano cheese
- 2 cups flour

Step 1
-lightly beat the egg
-add oil and cheese
-add flour and knead briefly to form dough
-roll dough into ropes about 1 inch diameter and cut into 1 inch pieces
-roll each piece down tine of fork, pressing lightly to roll
