Quick Smashed Chickpea Dip

Serve with crudites, crackers or pita bread. This also is a tasty sandwich topping, a rustic version of hummus. You can use hot sauce in place of cayenne if you wish. Try some minced fresh oregano in this dip, too.
Tahini can be found in natural food markets, Middle Eastern markets and some supermarkets.

Ingredients
- 1 (16 ounce) can chickpeas, rinsed and drained
- 2 cloves garlic, minced
- 2 tablespoons tahini (sesame seed paste)
- 1/4 cup extra-virgin olive oil
- Juice of 1 lemon
- Pinch cayenne or a few drops hot sauce
- Salt, to taste

Step 1
Place chickpeas in a nonreactive medium mixing bowl with the garlic and tahini. Mash beans with the back of a fork or potato masher. Gradually add olive oil and whip it in with fork until oil is incorporated but dip is still lumpy. Add lemon juice, cayenne and salt.
