Ingredients
- 8 ounces kefir cheese or cream cheese, softened
- 2 cups shredded Cheddar cheese (8 ounces)
- 1/4 cup finely chopped dried apricots
- 1/4 cup finely chopped dates
- 1 tsp ground coriander
- Dash of soy sauce
- 1/2 cup chopped pecans
Preparation
Step 1
In a food processor or blender, process kefir or cream cheese and Cheddar cheese until smooth. Stir in apricots, dates, coriander, and soy sauce. Spoon into medium-size serving bowl; chill at least 4 hours before serving to allow fruit to soften.
Before serving, top with chopped pecans. Serve with crackers or whole wheat pita bread pockets.
