Ingredients
- 2 Tbsp. soy sauce
- 2 Tbsp. toasted sesame oil
- 1 pound fresh Asian-style noodles or 12 ounces chow mein noodles or spaghetti (preferably thin noodles such as spaghettini)
- 2/3 cup Easy Basic Peanut Sauce
- 3 Tbsp. chicken broth, vegetable broth, or water
- 4 scallions, sliced thin on the diagonal
- 1 carrot, peeled and grated
- 1 small red bell pepper, cut into matchsticks
- 2 Tbsp. sesame seeds, lightly toasted in a skillet

Step 1
Boil the Noodles: Bring a large pot of water to a boil. Add the noodles and cook until tender (check the package directions for the cooking time). Drain and rinsed under cold running water until the noodles are cooled. Drain well, shaking the colander several times, and transfer to a large bowl. Toss the noodles with the remaining 2 Tbsp. of sesame oil.
Combine noodles, sauce and vegetables: Whisk the peanut sauce base, the remaini9ng 2 Tbsp. of the soy sauce, and the chicken broth together in a small bowl until combined. Add to the noodles and toss to coat. Add all but 2 Tbsp. of the scallions, the carrot, bell pepper and sesame seeds and toss well. Divide the noodles among 4 bowls, sprinkle each with the reserved scallions and serve.
