Polliwog Pie

You could probably make this with a vegetarian gelatin and get the same results.

Ingredients

  • 2 tbsp honey (adjust to taste)
  • 1/4 tsp salt
  • 1 1/2 cups fruit juice
  • 1 tbsp (1 envelope) unflavored gelatin
  • 1/2 cup whipping cream
  • 3 stiffly beaten egg whites
  • 1 baked pie shell

Preparation

Step 1

Mix honey, salt and juice in saucepan. Sprinkle gelatin over this. Heat and stir over low heat until dissolved. Cool until mixture mounds when dropped from spoon. Whip and fold in cream; fold in egg whites. Pour into pie shell. Chill several hours until set.
