Ingredients
- 1 egg
- 1/2 cup oil
- 3/4 cup honey
- 1 cup grated zucchini
- 1 1/2 cups whole wheat flour
- 1/4 cup soy flour
- 1/4 cup high-protein powder
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp salt
- 1 cup chopped nuts
- 1 cup raisins
Preparation
Step 1
Beat egg until light and fluffy. Add oil, honey and zucchini; mix well. Combine flours, protein powder, spices and salt; add to zucchini mixture. Stir in nuts and raisins. Drop by spoonfuls onto oiled baking sheet. Bake at 375 F for 12 to 15 minutes.
