Chicken Burritos

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 T olive oil
  • 1 1/2 C sour cream
  • 1 small can chopped green chilies
  • 1 C grated monterey jack cheese
  • 1 C grated sharp cheddar cheese
  • 8 medium flour tortillas
  • Lettuce, shredded
  • Tomatoes, diced
  • Green onions, chopped
  • Black olives, sliced
  • Guacamole

Preparation

Step 1

Slice chicken into thin strips. Saute in oil until just done. Remove from heat.

In large bowl, mix together sour cream, chilies, and 1/2 C of each type of cheese. Add chicken and stir well. Fill tortillas and fold burrito style. Place side-by-side in lightly greased 9x13 baking pan. Sprinkle remaining cheese on top. Bake at 350 F for 20-25 minutes or until cheese melts and burritos are warm throughout. Remove from oven and top with lettuce, tomatoes, green onions, olives, and guacamole.
