Two-Crust Pastry

Ingredients

  • 1 3/4 cups whole wheat pastry flour
  • 1/4 cup soy flour
  • 1/2 tsp salt
  • 2/3 cup butter
  • 5 to 7 tbsp ice water

Step 1

Sift together flours and salt; cut in 1/3 cup butter until the mixture looks like cornmeal; cut in the remaining butter until the pieces are the size of small peas. Sprinkle 1 tablespoon water over part of mixture; gently mash with fork and push to one side. Repeat until all is moistened. Form into 2 balls. Place in plastic bag and chill for 15 minutes. Flatten each on lightly floured surface and roll, from center to edge, all directions. Line pie pan with one piece; cover filling with other. If for no-bake filling, line 2 pie pans, prick pastry with fork and prebake at 375 F for 15 to 20 minutes.
