Ingredients
- 1 1/4 cups honey
- 3/4 cup softened butter
- 2 eggs
- 2 cups pureed pumpkin
- 2 3/4 cups whole wheat flour
- 1/4 cup soy flour
- 2 tsp baking powder
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp cloves
- 1 cup raisins
- 1 cup coarsely chopped nuts
Preparation
Step 1
Cream honey and butter; add eggs and blend. Stir in pumpkin. Combine dry ingredients and mix with pumpkin mixture. Fold in raisins and nuts. Bake in 2 greased 9-by-5-inch loaf pans at 350 F for 30 to 45 minutes.
