Rice-a-Roonies

Ingredients

  • 4 cups whole wheat pastry flour
  • 2 cups brown rice flour
  • 1 cup corn meal
  • 1 tbsp cinnamon
  • 1 tsp ginger
  • 1 tsp cloves
  • 1 tsp salt
  • 1/2 cup ground sesame seeds
  • 3/4 cup oil
  • 1/2 cup molasses
  • 2 cups apple juice or cider

Preparation

Step 1

Combine dry ingredients and seeds. Combine all liquids except 1 cup of the apple juice. Combine wet and dry ingredients. Add enough of the remaining apple juice to make a soft dough. Wrap in waxed paper and chill overnight. Roll on floured surface to 1/2-inch thickness. Cut with cookie cutters. Bake on oiled cookie sheet at 375 F for 12 to 15 minutes.
