Butter Tarts

  • Pie pastry
  • 1/2 c raisins
  • 1/4 c soft butter
  • 1/4 c packed brown sugar
  • 1 pinch salt
  • 1/2 c corn syrup
  • 1 egg,lightly beateb
  • 1/2 tsp vanilla

Preparation

Step 1

Prepare muffin pans be rolling out pie dough and cutting 4 in circles(approx)
Fit circles into muffin cups and se aside in frig
Place raisins in a small bowl and cover with hot tap water
Using a wooden spoon mix the butter,sugar salt and corn syrup-stir well u ntl sugar is dissolved and butter is creamed
Add egg and vanilla and mix well
Drain raisins
Divide raisins equally into all shells
Divide butter mixture into all shells
Bake at 400 for 15 to 20 min
Let cooked tarts cool in pans for 10 min after removing from the oven
