Applesauce Cake II

  • Topping:
  • Nonstick corn oil cooking spray
  • 1 cup whole wheat flour
  • 1 cup unbleached white flour
  • 2 tbsp unsweetened cocoa
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 3/4 cup chopped dates
  • 3/4 cup chopped raisins
  • 3/4 cup chopped nuts
  • 2 eggs
  • 1 jar (16 ounces) unsweetened applesauce (1 2/3 cups)
  • 1/4 cup corn oil
  • 1/2 cup finely chopped nuts
  • 2 tbsp sugar

Preparation

Step 1

Preheat oven to 350 F. Spray 13-by-9-by-2-inch baking pan with cooking spray. In large bowl combine flours, sugar, cocoa, baking soda, salt, baking powder, cinnamon, nutmeg and cloves; stir in dates, raisins and nuts. In medium bowl with fork beat eggs; blend in applesauce and corn oil. Add to flour mixture; stir just until combined. Pour into prepared pan.

Topping: Combine chopped nuts and sugar; sprinkle over batter. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Cut into squares.
