Ingredients
- 1/2 cup dried apricots
- 1 large orange
- 1/2 cup raisins
- 1/2 cup chopped almonds
- 2 cups unbleached flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 cup sugar
- 1/4 tsp salt
- 1 egg, lightly beaten
- 2 tbsp butter, melted
- 1 tsp vanilla

Step 1
Cover apricots with water and soak 1/2 hour. Squeeze juice from orange, save rind and add enough boiling water to juice to make 1 cup. Set aside.
Drain apricots and transfer to food chopper or food processor along with orange rind and raisins. Process until finely chopped. (Or, grate orange rind before juicing, chop apricots in processor, and keep raisins whole). Combine with almonds in large bowl.
Sift flour, baking powder, baking soda, sugar and salt over fruit and nuts and mix well. Beat together orange juice, egg, cooled melted butter and vanilla and add to dry ingredients, mixing just until moistened. Pour into greased 9-inch loaf pan and bake in preheated oven at 350 F for 1 hour, or until bread tests done.
