Pork/Chorizo (Mexican Sausage)

Ingredients

  • 2 1/2 pounds ground pork
  • 1 tbsp kosher salt
  • 1 tsp cracked pepper
  • 6 cloves garlic, minced
  • 8 tbsp Pasilla Powder
  • 1 cup chicken stock
  • 1 cup red wine vinegar

Preparation

Step 1

Combine all ingredients thoroughly in a large mixing bowl. Use immediately in a recipe or divide it into several freezer bags and store it in the freezer until needed. The chorizo must be cooked before serving.

Serve with Pico de Gallo Sauce.
