Pumpkin Spice Cookies w/ Cinnamon Frosting

An easy cookie to make using Betty Crocker's Pumpkin Spice Cookie Mix.

Ingredients

  • Cookie:
  • 1 box pumpkin spice cookie mix
  • 1 cup pumpkin puree
  • 1 egg
  • 1/2 stick of butter, softened
  • Frosting:
  • 1 stick of butter, softened
  • 4 cups of confectioners’ sugar
  • 1/4 cup of milk
  • 1 tsp. vanilla extract (optional)
  • 1 to 2 tsp. ground cinnamon
  • I skipped the vanilla as suggested by the lady who I adapted recipe from **

Preparation

Step 1

Cookie:

Preheat the oven to 350 degrees.
Prepare a cookie sheet with a sheet of parchment paper, or with grease and flour.
Dump the cookie mix, pumpkin puree, egg and soft butter into a bowl and mix it all just until combined.
Drop spoonfuls of dough about two inches apart on the cookie sheet.
Bake for about 10 to 12 minutes.

Frosting:

Put the butter in the bowl of mixer and beat until smooth.
Add the confectioners’ sugar, milk, vanilla (if you want; I thought it overwhelmed the cinnamon flavor) and cinnamon*.
Mix until blended and creamy; make sure to scrape the bowl with a spatula occasionally to get any renegade cinnamon hiding at the bottom.
Frost the cookies once they’ve cooled. I also topped with a candy pumpkin.
