Mom's Cream Puff Appetizers

Mom loved to host parties and she fed her guests well. Dad tended bar and was always generous with the liquor. I remember from my early years, these cream puffs with this savory cream filling. They'd be hosting their parties and I'd sneak in the back way to grab a few of these cream puffs. For some reason, I don't remember her making them after the early 70s. I've often thought of these appetizers and wished I could find the recipe. At last, I found this mis-filed and am delighted to be able to make these myself.

Ingredients

  • 3/4 C water or milk
  • 1/2 C butter
  • dash of salt
  • 1 C flour
  • 1 T sugar
  • 3 eggs
  • Cream cheese and blue cheese for filling.

Preparation

Step 1

Heat water, butter and salt to boil. Dump in flour all at once, cook until firm ball. Remove from heat and beat in eggs one at a time. Make large ones to fill with custard or small ones for appetizers filled with cream cheese combined with blue cheese. Bake 50-60 minutes at 375 or 400
