Irish Soda Bread

Ingredients

  • 3 cups whole wheat flour
  • 1 tsp baking soda
  • 4 tbsp butter
  • 1 1/4 cups buttermilk
  • 1 tbsp honey

Preparation

Step 1

Preheat oven to 400 F. Oil a baking sheet.

In a large bowl, mix flour and baking soda. Cut in butter with a pastry blender.

In a cup, combine the buttermilk and honey; stir into the flour mixture.

On a lightly floured work surface, knead the dough for 2 minutes. Shape into a flattened, round loaf (about 7 inches in diameter and 1 1/2 inches thick). Place on the prepared baking sheet. With a knife, score an "X" about 3/4 inch deep on the top of the loaf.

Bake 25 minutes; reduce heat and bake an additional 20 minutes. Serve with warm Ricotta-Orange Spread.
