Carob Clusters - Refrigerated

Ingredients

  • 1 cup almonds
  • 2 to 2 1/2 cups carob chips
  • 3 tbsp powdered milk
  • 3 tbsp oil
  • 3 tbsp lecithin
  • 1 1/2 cups shredded coconut
  • 1 cup chopped cashews
  • 1 tsp salt
  • 2 tsp vanilla

Preparation

Step 1

Coarsely chop almonds; spread in baking pan and roast at 300 F for 15 minutes or until lightly browned. Set aside. In top of double boiler, mix chips, powdered milk, oil and lecithin. Stir over hot, not boiling, water until chips are melted and mixture is smooth. Combine all other ingredients in a bowl and pour melted mixture over. Drop in clumps onto waxed paper. Refrigerate to set.
