Ingredients
- 2 eggs
- 1/2 cup oil
- 1 cup honey
- 1/4 cup yogurt
- 1 3/4 cups whole wheat flour
- 1/4 cup soy flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 tsp cinnamon
- 1 cup chopped nuts
- 1 cup pitted, chopped dried fruit
- 1 cup grated carrots
Preparation
Step 1
Beat eggs; add oil, honey and yogurt. Combine flours, baking powder, salt and cinnamon; add to egg mixture. Stir in nuts, dried fruit and carrots. Mix well. Spread into greased 9-inch square pan. Bake at 350 F for 45 minutes. Cool and frost.
